Keeping in step with the upswing in wine appreciation, this unique bar, dedicated to tasty, breath-spoiling artisanal cheese, is the place to have a gourmet experience with vino. Located inside the minimalist restaurant Bin 36, the bar features a 12-seat marble bar and a huge communal table made from wood reclaimed from a barn. All seats point toward the back wall, which contains a bank of sleek refrigerators that keep the menu's 50 different cheeses at the correct temperature. Make no mistake: Bin 36 isn't kidding around.
The cheese hails from all around the world, including some made from boutique European farmers and other from local Wisconsin farmers. The menu is laid out like a wine list: cheese is grouped according to the type of milk (as opposed to the type of grape) and runs from the mild to most pungent variety.
The whole spectrum is covered, from flaky, milky goat cheese to sharp cheddar to aged French blue cheese that makes your tastebuds (and nose) scream. All cost between $2-$4 per ounce and a half portion. You can even order cheese flights, like the American-made Down on the Farm or the rich Fat City, both of which cost $12. It’s a perfect complement to Bin 36’s extensive wine list.
